Bake bread cubes at 325° F for 15 minutes on a half baking sheet.
Remove from oven, toss in a large bowl with minced garlic, salt, pepper, and an ample amount of olive oil.
Toss thoroughly, this part can take a long time to get the cubes coated.
Pour croutons back on baking sheet. Use dryest looking croutons to mop up tiny bits of garlic so they do not burn.
Place back in oven for 15 more minutes, let cool, then put in airtight container.
